芒果海綿蛋糕 (全蛋法) Mango Sponge Cake (Pâte à génoise)

尺寸: 一個6吋蛋糕
Makes one 6-inch cake

材料 Ingredients:

海綿蛋糕 Sponge Cake:
蛋 3顆 3 Eggs
糖 75克 Sugar 75g
低筋麵粉 90克 Cake Flour 90g
無鹽牛油 (無鹽奶油) 30克 Unsalted Butter 30g
牛奶 30毫升 Milk 30ml
無鹽牛油 (無鹽奶油) 3克 (用作塗模具) Extra 3g of unsalted butter for oiling the mould

糖水 Sugar Syrup:
糖 5克 Sugar 5g
熱水 15毫升 Hot Water 15ml

忌廉芒果肉粒內層 Cream filing with mango pieces:
淡忌廉 (鮮奶油) 400毫升 Whipping Cream 400ml
糖 40克 Sugar 40g
芒果 2個 2 Mangoes
